MY SUNDAY ROAST CHICKEN...!! PART ONE!!




HELLO AGAIN LADIES..


BUSY BEING DOING THE YOU KNOW WHAT!! (sorting/listing stuff on ebay)..

BUT JUST THOUGHT I WOULD SHARE WITH YOU MY ROAST CHICKEN (CHOOK)! RECIPE...

COOKING THIS DINNER FOR CHRISTIAN AND I TONIGHT...


SO THIS IS MY ROAST CHICKEN recipe.....

1..FREE RANGE CHICKEN...(small to medium size)..


2..thoroughly scold/rinse under boiling HOT water...and remove ALL inner yukky stuff!! PLUS any bits of "fat" loitering around the edges!! & cut OFF any bits of fat loitering thereby!! and I always kind of GRAB out bits of fat I can SEE underneath the skin...YUK!!!!


3..then PRESS down to squash as MANY bones as possible..try to make it quite flat..

4..place a WHOLE lemon in cavity...squeeze lemon juice over top of chicken..also add some lemon preserve (if you like a lemony taste)..

you can also add some onion slices under skin..and in cavity..for an EXtra BIT OF PIZAZZ!!

(i NEVER add BUTTER under skin....enough fat there as is ..in my opinion)!!!

sprinkle SOY SAUCE all over...(yes!! soy sauce)...

drizzle HONEY all over..

ADD a dash of OLIVE OIL ..just to help the cooking process...

finish off with a good lot of MURRAY RIVER SALT....& GROUND PEPPER..

SURROUNDED BY LOTS OF GARLIC CLOVES (only cos hubby is away and cannot smell my breath!! I LUV GARLIC)...

I will then add some carrots...(plus christian has just come home from visiting dad's vegie garden with some pumpkin)...

sooo that will be added...to brown..roast etc....MM

potatoes ready to cook...AND MASH...

peas ready to go...

so just thought would share this little recipe I do...

If the chicken turns out to plan...part 2 may eventuate!!

We've been selling at the Market today - cold, tierd, .... just a few words that come to mind
Hot dogs in fresh white rolls with homemade tomoto sauce for us tonight...no so bad on a chilly winter's night
Although I would much prefer your dinner!!!

UMMMMMMMM, you have made me hungry and i have just had dinner!!! hahaha
what time was dinner again? i didn't get the time! wow looks sooo good i'll have to try it!!!
love the fact its freee range.. the taste is sooo different dont ya think?
